PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed cooked pork and pooled raw shell eggs with internal temperature of 55*F and 57*F in the prep cooler. cooked pork and pooled shell eggs were not inside cold holding well. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Manager stated the above food were put in prep cooler about 1 hour prior to inspection. Manager moved the above food to 3 door refrigerator for fast cooling at time of inspection.

In the low reach in cooler by the entrance to the kitchen, observed cooked breaded chicken at 48*F, cooked breaded pork at 47*F, cooked breaded shrimp at 48*F, cooked veggie spring rolls at 48*F, and cream cheese wontons at 48*F. Per manager, the foods had only been in the unit for the past 2 hours. Manager moved food items to working, reach-in cooler.

Minimum ambient temperature of cold holding unit was 48*F. Per PIC, food products had been in cold holding unit since yesterday. All food products were discarded by PIC at time of inspection.
