Inspector's notes

Observed cardboard boxes of shipped products sitting directly on top of opened foods (raw mushroom and raw yellow bell pepper). Alerted the manager who moved the cardboard boxes of shipped food to an appropriate place and scooped out the top layer of foods which came in direct contact with the boxes. Cardboard boxes could contain contaminants from the shipping process. Discussed miscellaneous sources of contamination with staff. Corrective Action: Corrected at time of inspection.

Observed the backflow on the mop sink, missing the cap, and leaking heavily when water is turned on. Alerted manager who had already placed a work order on the mop sink. The manager reached out to the person who manages the work orders to expedite the correction. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed cooked white rice (117-120°F) in the hot holding unit measuring with an internal temperature below 135°F. Manager stated the cooked white rice had been put in the hot holding unit, from where it was cooked, less than 3 hours before temperature measurement. All other foods in the hot holding unit were above the required 135°F. The cooked rice was reheated to 165°F and made into fried rice, at time of inspection. Discussed hot holding and reheating for hot holding requirements with staff. Discussed the importance of protecting food temperatures between cooking steps with staff.
