Observed cooked meat (130-132°F) in a hot holding unit below 135°F. Alerted manager who had staff reheat the meat at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Discussed hot holding and food flow with the manager. Corrective Action: Corrected at time of inspection.

All piping and fittings on the downstream side of this device must be plastic or stainless steel, no copper or brass.This establishment has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the issuance of this permit and begin operation, the applicant must first submit payment of the permit fee to the Department’s Business Services Office. Per Chapter I, Regulation 4, of the Maricopa County Environmental Health Code, no person shall conduct an operation or an establishment for which a permit is required without holding the necessary and valid permit to do so. Provide a minimum of 2 Navien NPE-240A2 (NG) tankless water heaters that can meet the minimum hot water demands of the fixtures in the facility. Removing and adding different water heaters will require an additional Remodel Application and Plan Submittal to MCESD.2. Provide a neck faucet in additions to the sprayer for the prep sink in the three compartment sink area.3. Provide a hard piped drain pipe for the steamer machine that empties into the nearby floor sink with a minimum 1 in. air-gap4. Ensure that the ice machines on top of the soda fountains have separate drain pipes that empty into floor sinks with minimum 1 in. air-gaps. The ice machine drain pipes must not connect to any other drain pipes.5. Provide a dedicated water line for any chemical dispensers installed in the mop sink area. Mop sink faucets cannot be used to supply water to chemical dispensers. Chemical dispensers installed on water lines must have proper air-gaps or testable backflow prevention devices installed.
