The person in charge stated the food items had been in the walk in for less than 4 hours since the most recent temperature check when the internal temperatures of the foods were less than 41F. Addl Notes: Observed cooked shredded beef, cooked salsas, vegetable soup, and pozole soup cooling in the walk in with interal temperatures between 85F - 105F, the food items were stored in deep plastic containers, tightly covered with lids, or stacked directly on top of each other preventing heat transfer. The person in charge stated the food item were placed in the walk in for cooling 1.5 hrs ago then removed the lids from the covered containers, placed food items in shallow pans on ice bath, and moved the other food items into a reach in freezer for rapid cooling. Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
