PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed small prep refrigerator in kitchen measuring with an ambient temperature of 45 degrees F. TCS food items stored in refrigerator such as pico de gallo, cooked meat, and cooked rice ranged with internal temperatures of 48-51 degrees F. Temperature check (logged) this morning at 9am indicates prep refrigerator was measuring at 36 degrees F. Discussed cold holding and proper use of temperature logs (minimum of checking internal temperatures every 4 hours). By inspection end- prep refrigerator measured with an ambient temperature of 37 degrees F. Prep refrigerator will be monitored closely to ensure food cools back down to 41 degrees F and remains at or below that temperature. Correct By: Corrected At Time Of Inspection
