Observed deli hot case holding bone in fried chicken, chicken tenders, and potato wedges with internal temperatures between 108-127*f degrees. Also observed customer self-service island hot case holding whole chickens 112-130*f degrees. Per deli manager items out of temperature less than 2 hours and reheated to 165*f degrees. Corrective Action: Corrected at time of inspection.

Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Discussed cleaning frequencies with staff. Corrective Action: Correct prior to next routine inspection.

Observed multiple wet pans and bowls stacked on small rack next to the 3-compartment sink. Stacked pans and bowls did not allow proper space to complete drying and water was pooled between. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. PIC separated dishes to allow for proper air-drying. Corrective Action: Corrected at time of inspection.
