Observed back of house reach-in prep fridge holding shredded cheese, cooked pasta, cubed chicken, buffalo chicken, roast beef chub, salami chub, ham chub, and pepperoni chub 45-52*f degrees. Also observed open top sandwich prep line right side holding tuna, mix sliced cheeses, and cut tomatoes 45-50*f degrees. Per PIC all item had been out of temperature less than 4 hours and sent to double door fridge to cool. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a snap-trap with peanut butter as the lure under the three-compartment sink. Also observed small rodent droppings under the standing freezer in the back of the establishment. Alerted staff who plan to have their third-party servicer out to assess the pest population. Staff to thoroughly clean under all surfaces frequently to help determine if the pest issue is ongoing. If droppings are still present after cleaning and service by pest control, repeat pest control visits may be required. Discussed pest monitoring and practices to reduce pest entry. A reinspection will be conducted in 10 days. ,Corrective Action: Correct prior to re-inspection.
