Observed employee wearing gloves and handling raw chicken. Employee changed gloves and then handled shrimp for another customer. Due to the difference in minimum cook temperatures, hands should be washed between handling chicken and shrimp. Educated employee and had discussion with manager about when to wash scenarios in the meat market. Corrective Action: Corrected at time of inspection.

Observed diced beef stir fry noodle skillet kits stored at the bottom of the display case under diced and sliced raw beef. The kit includes RTE foods, including cooked noodles and cabbage and carrots. The kits include the RTE items and must not be stored below any raw animal proteins. PIC moved the kits to be above the raw beef, properly stored at time if inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
