Observed that the food in the walk in refrigerator had internal temperatures ranging from 55F to 57F, measured with a calibrated probe thermometer. TCS foods must be kept at 41F or below. Observed the temperature of the walk in cooler to be 55.5F, measured with a calibrated min/max thermometer. Cold holding units must be capable of holding TCS foods at 41F or below. The PIC will call for service and other available cold holding units will be used until the walk in is maintaining a safe temperature. Please provide proof of repairs via email when completed.
