Observed covered water chestnuts, cut tomatoes, and cooked potatoes with internal temperature of 46*F underneath self-service line. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC moved foods to freezer to rapidly cool at time of inspection. PIC stated they will use ice baths going forward. Corrective Action: Corrected at time of inspection.

Observed several cutting boards with deep scoring all across surface. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. PIC removed from surface and replaced at time of inspection. Corrective Action: Corrected at time of inspection 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Addl Notes: Observed dishwasher machine not in use with a sanitizer concentration below 50 PPM. PIC voluntarily discarded the soup for quality purposes. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
