Observed salsa and white gravy held in the reach-in fridge past the seven-day date marks. Informed PIC that these items need to be discarded. PIC discarded these products at time of inspection. Food was embargoed. Suggested to PIC going through the fridge at the end of the day or before prep in the morning to discard any food that is past the seven-day date mark or will be after midnight. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Discussed proper cooling methods, cooling temperature parameters, and the importance of proper cooling with PIC. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Except during preparation, cooking, cooling, or when time is used as a control all TCS foods are to be maintained at 41°F or less. PIC had the out-of-temperature foods moved to the walk in to rapidly cool uncovered. PIC stated the potatoes had been cooler for approximately 5 hours. Observed the potatoes in an 18" wide stock pot stored 16-18" high. Ensure cooling from 135*F to 70*F is done in no more than two hours, and to 41*F or below in no more than four more hours. Cool most efficiently in shallow, uncovered pans in walk-ins, reach-ins or freezers. Had PIC separate potatoes into multiple containers and rapidly cool in an ice bath to expedite cooling. Advised PIC to cool future batches on sheet pans in the walk in cooler or in ice baths where there is more cooling capacity. Correct By: Corrected At Time Of Inspection
