Observed cooked chicken, boneless chicken wings, chicken wings, pepperoni, sausage, shredded mozzarella cheese, and mozzarella string cheese in the prep table unit with internal temperatures ranging 48*F-56*F. The ambient temperature of the unit is 56.1*F, measured using min/max thermometer. Employee informed that all TCS foods had been in the unit longer than four hours, except for the shredded mozzarella cheese which had been in the unit for 2 hours. Instructed PIC and employee to discard all TCS foods in the unit except for the mozzarella cheese, which was moved to the walk-in refrigerator. PIC and employee discarded all improperly cold held TCS foods. TCS foods were embargoed. The establishment is going to use time as a control for the TCS food items until the unit is fixed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
