Inspector's notes
Observed TCS food items being held in a hot holding case with an internal temperature of 118-120*F. Internal temperature registered with an internal probe thermometer. Per PIC all TCS food items were cooked to temperature before being placed under hot holding. PIC stated food items had been in hot holding unit for 1hr. TCS food items included chicken wings. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Facility is unable to reheat food due to company policy, all TCS foods improperly hot held were discarded by PIC at time of inspection. Facility is discontinuing the use of hot holding case until maintenance repairs unit to hold temp above 135*F across the case. Corrected at time of inspection.

Inspector's notes
Observed TCS food items inside an open air reach-in cooler with an internal temperature of 45-47*F. Internal temperature registered with internal probe thermometer. TCS food items included cooled rotisserie chickens, packaged shredded chicken, and potato salad. Per PIC all food items were inside case for greater than 4hrs. Ambient air of lower section of case registered 45*F with min/max thermometer. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.
