Inspector's notes

The following food items were observed with internal temperature range of 47-50*F while being cold held inside the make-line unit across from fryers at cook line; Diced cooked chicken, Pico, diced tomatoes, cut lettuce, and cheese. The ambient temperature of the unit was 58*F according to inspectors min/max (after 15minutes). Per PIC, all products were at proper temperatures (below 41*F) during the food safety check which took place 1.5hrs prior to this inspection. Inspectors reviewed the food safety checklist and confirmed times and completion. PIC submitted a work order for the unit and advised staff not to use it until fixed. All products were taken back to walk-in cooler where they were properly cooled with lids off to facilitate rapid cooling. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Corrective Action: Corrected at time of inspection.
