Inspector's notes

Observed TCS food items in prep-cooler with internal temperature of 45*F. Internal temperature registered with internal probe thermometer. TCS food items included cut tomatoes, salsas, shredded cheese, sliced cheese, and hardboiled eggs. Per PIC all TCS food except the hardboiled eggs were placed in unit under 4hrs prior to inspection. Hardboiled eggs were kept in unit overnight, their water was changed at opening with warm tap water. Per PIC the water was not cooled prior to placing in unit which resulted in a warm ambient temperature in the unit. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Eggs improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection. Second consecutive violation.
