Observed some wiping cloths that were stored dry on a prep table cutting board. Discussed with person in charge to store the wiping cloths when not in use in the sanitizer bucket with approved sanitizer concentrations. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed employee crack 2 raw eggs onto flat top grill using gloved hands, then wipe gloved hands with dry linen cloth and go and pick up chopped lettuce for plating a different order. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection, and lettuce touched by employee was discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Raw un-shucked oysters in plastic bucket with original label bleached and rubbed off, unlabeled on exterior. Shell stock buried in bucket under oysters was fished out to identify them. Other items in reach in refrigerator such as cooked conch, and various sauces not labeled. All bulk food items not easily identifiable must be labeled with common name of food.
