Foods such as beef stew and beans had internal temperatures as measured using a probe thermometer ranging from 40°F - 41°F. Air temperature from the fans as measured using an IR thermometer was reading between 36°F - 39°F.

Must provide parasite destruction letter from supplier prior to re-inspection. The person in charge will fully cook the shrimp until they can get the parasite letter from their supplier or switch to a new supplier that has parasite destruction. Inspector's notes

Observed cooked birria beef, beans, menudo, red pozole and barbacoa all with internal temperatures as measured using a probe thermometer ranging from 46°F - 50°F. A min-max thermometer was placed into the walk-in cooler and allowed to stabilize for 15 minutes. The air temperature in the walk-in cooler was holding at 47°F. An IR thermometer laser measured the air temperature coming off the fans at 47°F - 50°F. According to the person in charge, the foods had been in the walk-in cooler for more than 4 hours and were embargoed at time of inspection (see embargo form). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
