Observed some knives stored between a prep unit and the cutting board on the prep unit. Discussed with person in charge to store the knives in a clean, dry location such as a clean container. Observed several containers of cooked beans in reach-in cooler labeled with date marks of 8/8. Person in charge (PIC) was unsure if date marks were correct, as they have hired new staff and are still training. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Discussed training all kitchen staff on proper date marking and checking date marks daily to ensure no RTE/TCS are held past 7 days. Corrective Action: Corrected at time of inspection.
