Observed multiple large containers of house made salsa with date marks of 3/10 and 3/21 in walk-in cooler. Also observed several containers of cooked TCS items such as menudo and macaroni salad with date marks of 3/23 and 3/13. Person in charge discarded items at time of inspection. Discussed training new staff on proper date marking and disposition procedures. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
