Inspector's notes
Observed cooked chicken in sealed plastic bags with internal temperature between 46F -52F cooling in the deli cold case. The person in charge stated the chicken had been cooked and placed for cooling 4.5 hrs ago and removed the chicken from the plastic bag to be placed into a blast chiller for rapid cooling before being repackaged and placed back into the self-serve display case. Discussed fully cooling chicken to 41F or below prior to placing in sealed plastic bags and in the open display case. Corrective Action: Corrected at time of inspection.

Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
