Observed three in use deli slicers witch no log of last cleaning interval. Staff stated slicers are cleaned every 2 hours but no exact time of cleaning could be identified. slicers cleanings must be logged to communicate to all deli staff of when the next four hour interval is required. Corrective Action: Corrected at time of inspection.

Observed Deli staff remove Chicken from fryer operations. Staff took three internal temperatures and recorded on deli log. Inspector took internal temperature of chicken at 150*f degrees. Discussed the need to take more uniform cook temperature of product to get an accurate representation of bulk cook temperatures. All chicken pieces were individually temped and ones under 165*f degrees were recooked until above 165*f degrees. Corrective Action: Corrected at time of inspection.
