Observed large mixer and dough roller with built up dough and food debris. Per the person in charge, the equipment had not been in use since day prior. Discussed cleaning frequency and ensuring that all items are cleaned and sanitized. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.
