Inspector's notes
Observed walk-in fridge reading 49*F on the thermometer of the unit. Per the person in charge, the unit had not been opened for a prolonged period of time. Lights were turned off, and an ambient temperature was taken with a min-max thermometer. After about 25 minutes, the min-max thermometer had a minimum observed temperature of 46-49*F from the top shelf of the unit. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective action: Correct at once. **Establishment must cease operations until cold holding capacities sufficient for operation are restored.** A permit holder shall immediately discontinue operations and notify the regulatory authority if an imminent health hazard may exist because of an emergency such as a fire, flood, extended interruption of electrical or water service, sewage backup, misuse of poisonous or toxic materials, onset of an apparent foodborne illness outbreak, gross insanitary occurrence or condition, or other circumstance that may endanger public health.

Observed all frozen yogurt machine hoppers holding dairy based mix holding 45-50*f degrees at the back edge of the hopper, remainder of the hopper was found holding below 41*f degrees. Owner stated hoppers were just cleaned and refilled with the last two hours. Temperature was adjusted to cool down the mixture and more Refridgerated mixture was added to drop temperature rapidly. Observed standing small beverage cooler holding milk and three cans of whipped dairy topping, items holding 51-56*f degrees, embargoed. Cooler found iced over in the rear.
