Inspector's notes
Observed packaged cooked ribs thawing in stagnant water in the prep sink of the deli area. Ribs were removed from water and placed into the cooler. Spoke with PIC and stated that opened items need to be thawed under cool running water, it cannot be left in a sink with stagnant water. Also, any packaged items need to be thawed under refrigeration. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Corrective Action: Corrected at time of inspection.

Cooked chicken and cooked potato wedges with internal temperatures between 109 degrees F and 124 degrees F were hot holding in the hot case. Spoke with PIC and they directed kitchen associate to discard the TCS items that were not at 135 degrees F or above. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
