Observed multiple drainpipes located at the prep sink and 3-compartment sink without a 1" air gap between the terminating end of the drain pipe and the flood rim of the floor sink. The establishment shall maintain a 1" air gap between the drainpipes and floor sinks to prevent potential cross contamination of food-contact surfaces. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed a carton of liquid eggs with an internal temperature of 62 degrees F holding in a shallow pan with ice. Spoke with the manager and discussed placing the carton of eggs in a deeper pan and ensuring the ice level is above the product in the carton. Carton of eggs moved to cooler. Reviewed time as a control procedures. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
