Will follow up at next routine inspection. Per manager, the establishment is considering a remodel. The scope of the work includes extending the footprint of the kitchen by demolishing and constructing new walls and constructing a new walk-in refrigerator. Instructed the manager to submit a remodel application with the department prior to any work being done. In addition, discussed Dog Friendly Patio requirements with the manager. Provided links to the Permit Center website and guidance documents for remodel and dog patio application via email.

No County legal action will result from this inspection.Discussed the following topics with the manager and staff: 1) Utilizing probing thermometers to verify proper cook & holding temperatures of perishable food 2) Utilizing sanitizer test strips to verify proper concentrations at both the 3-compartment sink and sanitizer buckets 3) Fill in the large expansion joint seams in the separate food storage room adjacent to the customer restrooms. Fill in the seams with cement caulk so that the floors are smooth, non-absorbent and easily cleanable. 4) Consumer advisory requirements for undercooked menu items.

At the time of inspection there was not a Certified Food Protection Manager on site. Per owner, they are certified, but were not on site at the time of inspection. Discussed getting additional staff certified for proper coverage during all business hours. Provided link to ANSI accredited providers via email. #20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

Observed multiple Time/Temperature Control for Safety (TCS) food items that had been cooked yesterday afternoon and did not properly cool by the time of inspection. TCS food items include: cooked pinto beans, cooked chicken, and beef rolled tacos. Food items registered between 47°-48°F with a probing thermometer. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. The manager voluntarily discarded the food items at the time of inspection. Discussed multiple methods for cooling cooked foods including using shallow metal pans, using ice wands, using ice as an ingredient, storing foods on the top shelf inside the walk-in refrigerator. Provided guidance documents in person and via email. Corrective Action: Corrected at time of inspection.
