The hot and cold water valves on the food prep sink are reversed. Provide hot water on the left valve and cold water on the right valve.2. Provide a funnel drain assembly that empties into the floor sink for the RPZ backflow prevention device for the RO system.3. Provide a vinyl cove base finish at the floor/wall junctures and floor/cabinet junctures in the front service area.4. Provide a grate for the mop sink drain.5. Caulk the space between the bottom of the cooking hood and the stainless steel wall underneath. Use high temperature resistant, metallic silicone caulk.This establishment has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the issuance of this permit and begin operation, the applicant must first submit payment of the permit fee to the Department’s Business Services Office. Per Chapter I, Regulation 4, of the Maricopa County Environmental Health Code, no person shall conduct an operation or an establishment for which a permit is required without holding the necessary and valid permit to do so. The food prep sink must be connected to water supply lines so that hot and cold water are available. The extendable sprayer at this sink must be eliminated.2. Provide a side panel for the end of the sneeze guard at the point of sale end of the counter that is exposed to customers. This side panel should be as high as the portion of the sneeze guard that is already installed.3. Provide a metal cove base at the floor/wall junctures beneath the hood where there is currently a 90° angle at the floor/wall juncture.4. Provide a drain line with a hard pipe end piece for the coffee tap cooler. There should be a minimum 1 in. air-gap between the hard end piece and the flood rim of the floor sink that it drains into.5. Provide a funnel drain assembly that empties into the floor sink for the RPZ backflow prevention device for the RO system.6.
