PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. Observed eggrolls in hot holding on the rollers with an internal temperature of 80*F. Time/temperature control for safety foods should be hotter than 135*F to prevent the growth of pathogens. PIC stated they had reheated for one hour, and moved the food to another hot holding unit behind the 'still cooking' sign. A few minutes later the temperature of the food reached 115*F, and will continue reheating to 165*F. PIC placed the hot holding unit out of order. Correct By: Corrected At Time Of Inspection
