The person in charge stated the sushi had been prepared and placed into the coolers less than 2 hours ago and moved the sushi into the walk-in cooler for rapid cooling.

No food preparation is approved in the back storage room or across from the walk in cooler without installation of a handwash station. Employee was directed to roll the sushi on the cutting board at the reach in cooler. Facility in process of changing out all the equipment on the cook line and replacing the reach in coolers. Facility encased the soda system in the drive thru area and added a handwash station. Area is not completed to date. A remodel permit has been requested for completion of the remaining items:1. Replace soy sauce buckets with food grade containers. Buckets are not a multiple reuse container for food2. Provide ASSE 1022 dual check valve for the tea machine3.
