Observed shrimp ceviche and cut tomatoes with internal temperature between 45-49F stored in the prep cooler by the steam tables. The person in charge stated the items had been brought out of the walk-in less than 1 hour ago and placed them back into the walk-in cooler for rapid cooling.

Observed spray bottle of yellow liquid with no label on dish rack and a spray botle with pink liquid and no label by prep table at time of inspection. PIC states that the spray bottles have chlorine water and degreaser. Explained to PIC that all working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. PIC labeled spray bottles with the chemical name at time of inspection. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-7-204.11 - Priority: Sanitizers, Criteria-Chemicals Addl Notes: Observed active washing and sanitizing in the 3 compartment sink with a chlorine concentration of over 200PPM at time of inspection. Employee stated they use a pre-measured cup to fill the 3 comp sink at time of warewashing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Recommended discontinuing use of pre-measurement cup and manually checking chlorine concentration with testing strips to stay within the proper range of 50-100PPM. Sanitizer compartment was remade at time of inspection to correct concentration. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.
