Observed cups and utensils in the main dishwashing machine. After finished running through the water was tested on the surface of the plates and 0ppm chlorine was observed. Also observed dishwashing machine in the bar area with 0ppm on cup surface while washing and sanitizing cups. Person in charge called dishwashing company for services. Establishment to use three compartment sinks for all sanitizing purposes. 2nd consecutive violation. Corrected at time of inspection.

Observed mechanical dishwashing units at main kitchen and bar area not registering a concentration of chlorine sanitizer. The main kitchen dishwasher's sanitizer container was empty and the bar area dishwasher had not been primed after replacing with new sanitizer. The establishment shall maintain the dishwashers with sanitizer at a concentration between 50-100ppm to ensure proper sanitization of food contact surfaces. The sanitizer was replaced at the main kitchen dishwasher and the bar dishwasher was primed and then cycled again to show proper sanitizer concentration. Correct By: Corrected At Time Of Inspection
