On prep counter, flats of raw shell eggs with an internal temperature of 68*F. Per manager, eggs were removed from cold holding <30 minutes. Flats of raw shell eggs were moved to reach in refrigerator to rapidly cool back down to the proper temperature. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

Observed worker used gloved hand to handle cracked egg shells while placing them in the trash receptacle and then continue to touch margarine container and refrigerator door handle without first removing gloves and washing hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.
