Cool TCS food from 135F to 70F within two hours using an approved cooling method. Facility's high temp dishwasher thermometer read 150F and 160F after two runs through the machine. Inspector's thermometer read 170F both times. Maintain accurate means of verifying high temp rinse inside the dishwasher. Confirmed the emailed report was received. Maintain hot TCS food at or above 135F. Staff indicated that the unit was unable to be adjusted warmer. The person in charge opted to voluntarily discard the chicken burritos, and will make the burritos per order. Ensure the unit is repaired and in good working condition.
