Inspector's notes
Observed hamburgers with an internal temperature of 116-120*F on serving line. According to logs, foods on serving line must be kept at or above 135*F when hot holding since some TCS foods might be reserved next day. Discussed importance of documenting temperatures as soon as they are moved to the assembly line to ensure food is at 135*F. Discussed warming buns prior to assembling burgers to help maintain hot temperatures. Burgers were voluntarily discarded and replaced with new ones.
