#23 — Proper Date Marking and DispositionPriority3-501.18

PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources. Observed two pans of prepped burritos (cooked meat with smashed fries wrapped in a tortilla) with date marks of 8/27 and 8/28 in walk-in cooler. Per person in charge (PIC), date marks are placed on TCS food items on the date the items are made. PIC was unable to verify with staff if those were the correct 'made on' dates. PIC voluntarily discarded items at time of inspection. Discussed placing a 'made on' date and 'discard' date to prevent any confusion between staff members. Correct By: Corrected At Time Of Inspection
