Observed a large accumulation of dust and lint on the lamps directly above the prep station and also on the vents above that blow in the direction of the fryers. Discussed with person in charge to clean the establishment on a more frequent basis to prevent the accumulation of debris and dust. The person in charge will clean the establishment. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Discussed with person in charge to acquire the clear tubing that slides over the light tube as shielding or to acquire a lamp cover. The PIC will work on covering the light tubes.
