Internal temperature ranging between51*F to 43*F for food items including: cooked meats, and raw egg batter stored in two door prep refrigeration unit. Ensure to store raw egg batter under refrigeration at 41*F or below. Refrigeration unit verified at 41*F or below. Per operator, food items were placed in unit less than 1hour and were used for intervals during earlier service. Operator proceeded to place food items in walk-in refrigeration unit. Internal temperatures ranging between 45*F to 51*F for salsas stored in salsa bar area. Ensure to maintain plenty of ice to keep salsa stored at 41*F or opt for time as a health control for food items to be discarded within 4hours. Operator proceeded to discard salsa items that were placed in unit from earlier in the day. More ice was added to unit. Unit is not mechanical refrigeration, discussed with operator to opt for a mechanical refrigeration unit. Additional refrigeration at 41*F or below is available in food establishment.
