-- In walk-in refrigerator, multiple packages of raw T-bone beef steaks and raw ground beef patties were stored above ready-to-eat prepackaged pot roast. No visible contamination observed. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

-- Chlorine concentration levels undetectable on dishes in dishwasher. Reviewed the required specifications of 50ppm-100ppm with the PIC. At the time of inspection, the PIC replaced the low sanitizer container and primed the dish machine. After replacing the container and priming, the sanitation levels tested within the 50ppm-100ppm range. Please ensure employees are checking for low detergent/sanitizer containers, and utilizing test strips to verify dishes are getting properly cleaned and sanitized. Corrective Action: Corrected at time of inspection.

Uncooked hashbrowns, raw shelled eggs, liquid egg, and whipped butter held under time as a control with time stamps showing a discard time of 10 AM today. PIC stated the stamps were incorrect and marked them correct except for the hashbrowns. After discussion, it was determined the hashbrowns may have been mixed with a previous batch and the hashbrowns were discarded. Please ensure accurate time stamps are provided each time TCS food items enter time as a control and that batches of items using time as a control are not mixed - a new pan should be provided with new product. Corrective Action: Corrected at time of inspection.
