Inspector's notes
Observed individually packed cream cheese 50*F-54*F in two containers with ice water in a cold holding unit at the time of inspection. Cream cheese was stacked three tubs high, observed ice water covering only the bottom containers of cream cheese but not the top two layers of cream cheese. Per PIC, the cold holding unit is not working properly and establishment puts cream cheese on ice to keep temperature. Except during preparation, cooking, cooling or when time is used as a control. Per PIC, cream cheese was taken out of the walk-in cooler less than 4 hours prior to the time of inspection. PIC added enough ice on top of the tubs of cream cheese to completely submerge the TCS product at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed prepackaged cream cheese tubs on bottom shelf of display cooler at 51 °F. Observed air temperature of 52 °F in bottom of unit as measured by air thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Person in charge (PIC) discontinued use of bottom shelf for storing time/temperature control for safety (TCS) foods. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed in the front display case packaged smoked salmon measuring 50°F. Per PIC the smoked salmon had been in the display case for more than four hours. The unit itself measured 55°F on a Cooper min-max thermometer. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
