Observed oranges which, were to be used to make the fresh juice sold on site, were discolored and many had mold on them. Food shall be safe, wholesome, unadulterated, and accurately represented under § 3-601.12. Observed that the sanitizer basin of the 3 comp sink tested at 0ppm for chlorine sanitizer. The PIC found that the chemical dispenser was not properly dispensing the sanitizer. Manually add chlorine sanitizer to until the dispenser is working properly. Ensure the sanitizer is tested daily so that all wales are properly sanitized. The PIC stated they would ensure that the sanitizer concentration will be tested for properly sanitized wares. Correct By: Corrected At Time Of Inspection
