Observed pasta that had just been cooked placed in cold table on cooks line with an internal temperature of 52 degrees F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Person in charge (PIC) moved pasta to walk in to cool at time of inspection. Corrective Action: Corrected at time of inspection.

Observed real butter cold holding on the counter at internal temperature of 56 deg F, observed cut baked chicken and cooked pasta cold holding at internal temperature of 46-48 deg F in reach in drawer on preparation line. Chef informed all food items had been prepared earlier in day and placed in walk in for rapid cooling. Manager informed butter will be placed on the time as a control procedure. Observed the floor drain under the three-compartment sink overflowing above the surface of the drain on the floor area of a portion of floor beside high temperature dishwasher and draining into the drain beside the floor drain. Dishwashing was discontinued and floor drain was draining slowly. Manager called plumber who arrived during inspection cleared obstruction and provided a free-flowing drain. Manager instructed staff to sanitize floor area. Corrective Action: Corrected at time of inspection.

Corrective Action: Corrected at time of inspection. Cut lettuce, cut tomatoes, cooked vegetables, raw and cooked meats, cooked pastas and cheeses in the salad cooler drawers and the saute cooler drawers. at 47*F to 53*F internally. Manager stated the foods had been put into the units less than one hour before and were moved to the walk-ins to re-cool. Time as control was started for the TCS food until repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
