Observed employee return from break, enter back room, put apron on, come out of back room and begin making drinks on bar without washing their hands. Informed employee to wash hands at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Corrective Action: Corrected at time of inspection. Whipping cream in in-use insulated cannister at 61*F internally. PIC stated cannister had been prepared the previous evening. Embargoed, PIC discarded. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Discussed hand washing the cannisters, rather than putting them in the high temperature dishwasher, then storing the cannisters in the walk-in with the lids off to ensure there is no residual heat inside and the cream maintains 41*F or below.
