Observed 3 compartment sink with 0ppm concentration of sanitizer at time of inspection. Establishment used quaternary ammonium sanitizer, but ran out of the sanitizer this morning. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Located chlorine from chemical storage at time of inspection. Demonstrated to PIC how to measure sanitizer levels for using chlorine sanitizer. Establishment will use chlorine sanitizer until they receive more quaternary ammonium sanitizer. Employee returned recently washed ware to sanitizer for one minute, per label directions. Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturers specifications.

Corrective Action: Corrected at time of inspection. Crepe batter containing milk, per employee, held in a plastic squeeze bottle in a pan half filled with ice. Internal temperature of the batter was 62*F and employee stated it was being held under temperature control and had been out more than 4 hours. Embargoed, employee discarded. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
