Observed 58°F internal temperature of raw chicken, per probe thermometer, inside bottom compartment of cookline prep cooler. Per person in charge (PIC), raw chicken was removed from walk-in, prepared, and then placed into bottom compartment of prep line cooler to cool less than an hour prior to inspection. TCS foods shall be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Container of raw chicken cooling was uncovered and moved to walk-in to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

All floors, walls, and ceilings shall be maintained in good repair and repaired such that it is smooth and easily cleanable. Observed chopped lettuce/47°F, calamari/51°F, cooked garlic sauce/48°F, blue cheese/47°F, and sliced tomatoes/45°F in the front prep cooler. According to the person in charge all TCS foods were within safe time parameters and was moved to the reach in cooler.

Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed cooked lasagna/ 48°F, chicken stock/ 48°F, raw chicken 48°F, meat sauce/55°F, and marinara sauce/ 51°F in the walk-in cooler. After discussion with the person in charge the walk in cooler was functioning last night. It could not be determined how long exactly the walk-cooler was holding above 41°F since then. All TCS foods in the walk in cooler improperly cold held were discarded by PIC at time of inspection. Observed minimum internal temperature of walk-in cooler at 56.4°F with min/max thermometer at the start of the inspection. PIC opened the freezer door and service call was made at time of inspection. Minimum internal temperature of the walk-in cooler observed at 36.8°F approximately an hour later after the walk-in cooler was serviced. Ensure all TCS foods are stored in equipment that maintains 41°F or below. Corrective Action: Corrected at time of inspection.
