Observed tuna mix and sliced turkey on the line holding 48*f degrees. Per PIC tuna mix had just been placed on the line with the last 2 hours and the sliced turkey was from the morning. Sliced turkey embargoed and tuna mix sent to walk-in to cool. Corrective Action: Corrected at time of inspection. All TCS foods are required to be held below 41*f degrees.

Observed sliced tomatoes and chopped lettuce with a temperature of 55.6F in the prep cooler under the toaster ovens. The PIC indicated that the products were placed in the coolers 3.5 hours prior to inspection. All TCS food products must be kept at 41F or colder at all times. The PIC moved all the TCS products into the walk-in to cool down and to be held at 41F. Correct By: Corrected At Time Of Inspection
