Inspector's notes

-- Sausage burritos, American cheese, and shredded lettuce had internal temperatures ranging from 51°F-56°F in lower portion of reach-in refrigerator. The person in charge (PIC) stated the items were prepared and placed in the unit around 9:00 AM on 9/12/24. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

At the time of inspection, all TCS items were removed from unit and the PIC placed a work order for repairs. The establishment has sufficient refrigeration space to continue operating safely until reach-in unit is repaired. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.
