Observed chicken tenders, chicken wings, mac and cheese, and fried chicken holding 109-124F in the hot holding display case. Staff reheated the food items. It was determined that the temperature of the unit had been set too low. PIC raised the temperature to allow for proper hot holding. Corrective Action: Corrected at time of inspection.

Observed rotisserie chicken holding 100F or greater and placed in bags that were sealed, and in the process of cooling. Discussed cooling TCS food items like whole rotisserie chicken to 41F before placing them in bags, to allow for better air flow and to ensure proper cooling is achieved within 6 hours. PIC had staff place the chicken on a speed rack to cool. Corrective Action: Corrected at time of inspection.
