Observed tightly covered containers of chili in walk-in cooler with internal temperatures above 150°F. Per manager, chili, about 15 minutes prior, was stored in walk-in to cool. Discussed proper cooling methods and loosely covering chili until internal temperature reaches 41°F. Manager instructed staff to remove lids. Corrective Action: Corrected at time of inspection.
