Inspector's notes
Observed thawing sugarcane in the rinse compartment of the 3 comp sink. PIC stated the 3 comp sink is used for thawing because of the spray head attachment and dishwashing is performed in the food 2 comp sink. PIC stated that the establishment only washes dishes using soap and water. Food-contact surfaces must be properly sanitized after washing and rinsing. Establishment had chlorine sanitizer that was safe to use to sanitize food contact surfaces. Reviewed 3 comp setup, sanitizer concentration (50-100ppm chlorine sanitizer), and cleaning frequency for wares used with TCS and non-TCS foods. Food-contact surfaces were properly sanitized at time of inspection. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.
