Observed cooling pork in a covered metal pan in the prep cooler the PIC stated was cooked 5 hours ago, air cooled, then moved to the prep cooler. All TCS foods cooling were uncovered to allow for rapid cooling and placed in the reach in freezer. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Advised PIC prep coolers are intended only to hold already cooled TCS foods are are not intended to cool foods. Corrective Action: Corrected at time of inspection.

In the back of house reach in under the cold table, observed a medium metal container of cooked noodles with a date mark of 09/13. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
